بهینه سازی خشک کردن مغز بادام درختی به کمک شبکه‌های عصبی مصنوعی

چکیده
در این پژوهش خشک‌شدن بهینه مغز بادام بوسیله سه خشک‌کن پیوسته، خلاء و فروسرخ و نیز ترکیب هرکدام از آنها با مایکروویو بررسی شد. عملیات در سه سطح دمای هوای (℃۴۵ ،۶۵ و 75) ۴۵،۶۵و75برای همه روش‌ها؛ برای خشک‌کن ترکیبی در سه سطح قدرت مایکروویو (watt۶۵۰، 450 و250) و سه سطح فشار خلاء (kpa۶۵، 45 و 25) و برای نوع فروسرخ در سه سرعت خطی تسمه (〖cm min〗^(-1)۶۳، 39 و 15) و سه سطح قدرت تابش (watt ۱۵۰۰، 1000 و 500) انجام گرفت. در روند خشک‌شدن رطوبت اولیه از ۴۶% به حدود ۶% بر پایه وزن ماده خشک کاسته شد. در سنیتیک خشک‌شدن مغز بادام در هر سه خشک‌کن ترکیبی مهمترین عامل مستقل اثرگذار میزان دمای هوا بود. نتایج و اطلاعات مربوط به داده‌های آماری به دست آمده از هر سه خشک‌کن با چندین مدل خشک‌شدن برازش شد. بهترین مدل ریاضی با پائین ترین مقادیر (RMSE)ریشه میانگین مربعات خطا،۲χ و بالاترین مقدار ۲R مدل میدیلی بود که دارای بالاترین دقت در پیش بینی روند خشک‌شدن مغز بادام نسبت به سایر مدل ها می‌باشد. در خشک‌کن ترکیبی مایکروویو-خلاء مقدار درصد چروکیدگی از 5/8% تا ۱۵%، تغییرات کلی رنگ از 2/6 تا ۱۴، انرژی فعال‌سازی از (〖 kj mol〗^(-1)۷/۳9-۲/۲۱) ، ۷/۳9ضریب پخش موثر رطوبت از (〖 m〗^2 s^(-1)۸-۱۰×16/6-۸-۱۰×2/1) و انرژی ویژه مصرفی از (〖Gj kg〗^(-1) 17/0-06/0) بود. در خشک‌کن ترکیبی مایکروویو-پیوسته درصد چروکیدگی (1/12%-1/7%)، تغییرات رنگ از ۵/۸ تا ۱۹، انرژی فعال‌سازی (〖 kj mol〗^(-1) ۷۵/۱۱-۷/۲۴)، ضریب پخش موثر رطوبت از (〖 m〗^2 s^(-1)۸-۱۰×۹/۹- ۸-۱۰×۱/۱) و انرژی ویژه مصرفی از (〖Gj kg〗^(-1)۵/۱۰-9/0) بود. در خشک‌کن ترکیبی مایکروویو-فروسرخ درصد چروکیدگی از ۱۵%-۷/۸% ، تغییرات رنگ از ۱/۷ تا ۲۲/۱۷، انرژی فعال‌سازی از (〖 kj mol〗^(-1)05/21-95/10)، 05/21ضریب پخش موثر رطوبت از (〖 m〗^2 s^(-1)۸-۱۰×۵/۴-۸-۱۰×۴/۱) و ۸-انرژی ویژه مصرفی از (〖Gj kg〗^(-1) 6/0-2/0) محاسبه شد.
