In this research, due to the high sensitivity of cherry juice to heat, by comparing the two new technologies of cold atmospheric plasma and pulse electric field, an optimal solution for the pasteurization of cherry juice was presented, which, in addition to reducing the microbial load, preserves the valuable compounds in it. For this purpose, the effect of cherry juice flow rate (1-3 l/min), input gas flow rate for plasma formation (3-7 l/min) and argon gas percentage to air (0-100%) on the reduction of Escherichia coli in the combined spraying system- The plasma jet was investigated, and then the effect of temperature (25-65°C), field intensity (10-5 kV/cm) and field application time (35-5 s) on the reduction of Escherichia coli in the electric pulse field system was investigated. The optimization results showed that the optimal value of temperature, intensity of the pulsed electric field and the time of application of the field to inactivate Escherichia coli in cherry juice are 2.4 l/min, 4.72 l/min and 63.46% respectively, which in this case the Plasma-jet spraying system results in 1.372 log inactivation of Escherichia coli present in cherry juice. Also, the optimal value of temperature, intensity of pulsed electric field and time of application of the field to inactivate Escherichia coli in cherry juice are 72.64°C, 9.94 kV/cm and 25.74 s, respectively, in this case, the system of pulsed electric field leads to log 3.94 inactivation of Escherichia coli present in cherry juice. The presented models and the results of the experiments showed that the temperature of cherry juice in the pulsed electric field system and the juice flow rate in the plasma jet spraying system were introduced as the most important factors in the inactivation of Escherichia coli in cherry juice.
